According to the thermodynamic phase equilibrium theory, the three-phase point temperature of water is 0.0098oC and the pressure is 4.579mmHg. In the phase change process, when the pressure is lower than the three-phase point, the water vapor escapes from ice without being transformed into liquid water.

Frozen-Spray-Dried coffee powder uses this characteristic in the processing steps. First of all the coffee concentrate is frozen to low temperature (as low as minus 40oC) , then the water of the coffee solution is heated and sublimated under high vacuum and evaporates. Therefore the coffee powder is frozen into fine crystal particles. 

Because of the drying process is carried out under ultra-low temperature and high vacuum, the aromatic substances that are heat sensitivity can be retained to the greatest extent; Therefore, our coffees are still have the rich aroma and original creamy flavor.

Our fine coffee powders are full of sponge like micropores which formed during water escaping, as such the solubility is particularly good. When you make our TCM Black / White coffees with hot water (> 85odC), the most original coffee aroma would come to your nose; It seems that you are grinding and cooking the delicious coffee yourself. The Color, fragrance, taste, mellow and nutrition are all there in the room!
